Synthetic capsaicin, also known as capsaicinoid, is a vanillamide alkaloid extracted from chili peppers (Solanaceae family).Its chemical formula is C18H27NO3 with a molecular weight of approximately 305.41.

As a white monoclinic rectangular flake crystal in pure form, it has a melting point of 62-65ºC and a boiling point of 210-220ºC. It is highly soluble in organic solvents like ethanol and acetone, slightly soluble in carbon disulfide, and hardly soluble in cold water.

Naturally, it mainly exists in the placental and septal tissues of chili fruits, accounting for about 0.1%-0.4% of the content.

In applications, it serves as a natural spicy additive in the food industry (for flavoring and preservation), a raw material for
green pesticides in agriculture (to repel pests), and an ingredient for eco-friendly antifouling coatings in industry, as well as
for security products like pepper sprays.
