In China's food additive standard GB2760-2011, copper chlorophyll sodium salt can be used in frozen beverages, canned vegetables, cooked beans, processed nuts, candy, baked goods, fruit and vegetable juices, mixed wine and other foods.

 

The main body of chlorophyll is composed of porphyrin ring and aliphatic hydrocarbon side chain. There is an unstable magnesium atom in the center of porphyrin ring, which is easy to be lost or replaced, resulting in the lack of stability. Replacement of magnesium atoms by metal elements is an effective way to improve the stability of chlorophyll. At present, the commonly used way is to process mulberry leaves or silkworm excrement containing more chlorophyll into sodium copper chlorophyllin by saponification and copper substitution,
